This rare and remarkable plant, a relative of purslane (Talinum paniculatum) is both ornamental and delicious. The lime-green succulent leaves are used in salads and the seed heads add delicate texture to floral arrangements. The leaves taste like a cross of lettuce and spinach. The greens remained sweet and non-bitter even in the worst heat and drought in a century and continued to produce until the first hard freeze this fall. The plants take a while to get to size, so I'd recommend starting them early inside or seeding as soon as the ground thaws in the spring. The seed is tiny, so you'll get quite a few . I'm certain Jewels of Opar will become a staple in your garden year after year!
