Green Wave Mustard (Brassica juncea) is a best known as being the spicy mustard green. This especially true if eaten raw, whereas when cooked it'll be much more mild. For salads, it's best to harvest at the baby stage. Mature longer for cooking greens. Will produce bright green broad leaves that are frilled. Slower to bolt than other mustard greens. 1957 AAS winner
